Hand-picked, basket pressed with 10% whole bunch, racked into large old French oak hogs heads and 10% of the original pressings blended prior to bottling.
Tasting Notes
Bright, brooding array of mixed fruits that start with cherries and raspberries, but move like a freight train through the palate, gathering momentum that piles on forest fruits and black olive intensity. All that fruit is held together with brilliant acidity and soft tannins.
Technical
Minimal filtration, vegan fined and minimal sulphur on bottling to keep the wine fresh and lively.
